MADE BY THE TRADITIONAL METHOD
Three Amazing Sparkling Wines
Some wines wait quietly for dinner. Sparkling wine has other ideas.
Fizz, Bliss and Bubbles are three distinctly different California wines, each made by the traditional French Méthode Champenoise process, with secondary fermentation taking place in the bottle.
One is white, two are red and none is short of personality.
Traditionally, sparkling white wine has marked life’s special occasions—birthdays, weddings, christenings and all the other moments that deserve more than an ordinary bottle.
Open one to welcome friends into your home, pour it with food or simply decide that today deserves bubbles.
More unusually, Bliss and Bubbles are red wines that can be served chilled—perfect with a burger or steak beside the pool on a summer day.
THE COLLECTION AT A GLANCE
The traditional method gives each wine fine bubbles, freshness and the additional complexity that comes from fermentation and aging in the bottle. The grape varieties give them three very different personalities.

Fizz — Extra Brut Blanc de Blanc
Fizz
Extra Brut Blanc de Blanc Sparkling White Wine
100% Chantilly Chardonnay Vineyard Block
Home Ranch Estate · Dry Creek Valley
Fizz is bright, dry and precise, with fine bubbles carrying fresh citrus, orchard fruit and a clean mineral edge.
Chardonnay gives it elegance; the Extra Brut finish keeps everything brisk and beautifully composed.
Pour it with oysters, smoked salmon, soft cheese, fried chicken or the first small bites placed on the table. It is equally capable of beginning dinner or improving an afternoon.
Bliss — Sparkling Shiraz
Bliss
Sparkling Shiraz Red Wine
Vineyard-Two Syrah Block
Home Ranch Estate · Dry Creek Valley
Bliss brings dark berry fruit, plum and savory spice to a lively stream of bubbles.
Shiraz supplies depth and warmth; the traditional method gives the wine freshness and lift.
Serve it cool with barbecue, roast duck, glazed pork, charcuterie or dark chocolate. It is generous enough for the main course and lively enough to keep the evening moving.
Bubbles — Sparkling Malbec
Bubbles
Sparkling Malbec Red Wine
Soda Rock Vineyard · Alexander Valley
Bubbles is dark, generous and wonderfully unexpected. Malbec brings blackberry, plum and spice, while the fine bubbles keep the wine fresh and animated.
Pour it with grilled beef, roasted lamb, hard cheese, charcuterie or a leisurely brunch.
It is a red wine with bubbles, which may sound mischievous until the first glass disappears.
THE TRADITIONAL METHOD
The French Méthode Champenoise process creates the bubbles inside each bottle through a second fermentation.
It is slower, more demanding and considerably less convenient than simply putting bubbles into wine.
The wine then remains in contact with its lees, developing finer bubbles, greater texture and additional complexity. That is precisely why we use it.
